When it comes to Valentines, there are three things that will make a girls heart melt. Obviously, diamonds are a girls best friend, but if those aren’t in your budget, not to worry, chocolate and flowers are next up.

Now, you can get chocolate anywhere, but if you want to give your gal something special, go local with Mukilteo Chocolate Company. Owner Laurie handcrafts the most amazing truffles, caramels, and fudge you will find. Her truffles are a favorite of The SnoCo Kid, who loves the Salted Caramel and Lemon Creme. I, on the other hand, can’t resist the fudge, anything with caramel or a coffee flavor. You read right, coffee flavored fudge.

With Valentine’s Day quickly approaching, I couldn’t resist the opportunity to sit down with Laurie to find out more about her business, and of course sample some goodies while there.

How did you become a chocolatier?

Basically, making chocolate fell into my lap. My best friend Jan used to own the shop and I would come in to visit with her. Over the course of eight years, I took on more and more roles in the shop to help her out. I spent three of those years learning the chocolatier ways from her, and when the time came for her to move on last July, I bought the shop from her and took over.

What makes your chocolates different from those found in other shops?

My chocolate and truffles are created in the European Style. They are made using lots of cream and butter, each by hand. I don’t use a machine. It is a long process, but the end result and how much customers enjoy them, make it worth every hour spent.

Where does the inspirations for your chocolate, truffles, and fudge flavors come from?

It is fun to create new flavors. Some are inspired by seasonal trends and others by my personal cravings. My friends and family like to come up with flavors as well. If it sounds good I will say, “lets give it a shot.” Like my son has requested a Maple Bacon Fudge, so that will be coming up soon.

Where do your ingredients come from?

I try to get most of my ingredients locally when possible. The sugars and butters used are all organic..

What is your favorite chocolate creation?

I have two favorites in the shop. They are the Key Lime Truffle and Ghost Pepper Salted Caramels. I love the “pucker” you get when you bite into the Key Lime. They are made with fresh zested and juiced Key Limes and remind me of Key Lime Pie. As for the Ghost Pepper, I have always loved spicy food, so it is right up my alley. The creaminess of the butter and cream in the chocolate, with just enough spicy, keeps me and others coming back for more

What is the best part about owning the shop?

That would have to be getting to know my customers. We all have a story to tell and I try to make each one feel important. I want them to leave happy.

What Valentine’s Day goodies are available?

Our truffles and caramels are our best sellers for Valentine’s Day. This year we have new heart shaped boxes and I love You boxes that make the perfect gift. I will also be creating Dark Chocolate Strawberry Truffles just for the occasion. Chocolate covered strawberries will also be available by pre-order.
